主料:鸡半只、核桃

辅料:干辣椒、鲜青、红椒、葱、姜、蚝油、老抽、料酒、白糖、盐

1. 鸡肉洗净后斩成小块,加入一小勺盐、料酒、老抽码味去腥,腌20分钟左右;辣椒、葱、姜切好、核桃去壳备用。

2. 核桃过油炸脆。

3. 锅入比平时炒菜略多一点的油,加热后放进姜、葱、干辣椒用慢火炒出香味。

4. 倒入腌制好的鸡肉,转成中火慢慢炒至鸡肉变色、水分收干,加白糖、蚝油、少许的盐和生抽炒至上色。

5. 加入一小碗热水,用中火炖至汤汁收干为止。

6. 最后加鲜的青、红椒和炸过的核桃,翻炒两下即可出锅。
